With Thanksgiving around the corner most of us are eagerly looking forward to spending time with friends and family, overloading on stuffing and mashed potatoes, and of course the leisurely afternoon naps that follow.

If you’re like me, you haven’t quite made it to the turkey carving stage yet.  Most likely you’re traveling out of state to visit family or perhaps even having a 'friendsgiving' locally.  Either way, you can show your friends or family how much you care by contributing a side dish that is seasonal, yet special.

This sweet potato casserole recipe is a favorite of my friends and family, and soon to be one of yours.  The preparation is quick and easy too with one step of assembling the ingredients.  It’s sweet, but healthy – sweet potatoes are actually a super food!  This recipe serves about six to eight people, but can be easily doubled.

Casserole:

  • 3 cups mashed sweet potatoes
  • 1 cup brown sugar
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 1/2 cup melted butter

Topping:

  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup melted butter
  • 1 cup chopped pecans

Directions:

Combine all 6 of the casserole ingredients in a large bowl.  Blend thoroughly and pour into a buttered 1 1/2 to 2-quart casserole dish.   Mix the topping ingredients and sprinkle over the sweet potato filling.  Bake at 350° for 30 to 40 minutes, until hot, browned, and bubbly.  And voila - you have the perfect side dish for your thanksgiving feast!
